Cool Weather Crumble

(Sugar-free, Paleo, optional Vegan)

Ingredients:

Base

1 cup pear or persimmon

1 cup frozen black cherries

1 1/2 cup diced apple

1 Tsp tapioca or arrowroot powder

1 Tbsp grass-fed butter

Crumble

1 cup softened pitted dates (soften by microwaving with 1 Tbsp water for 20 seconds)

1/4 cup almond or cassava flour

1/4 cup dried coconut flakes

1 cup pecans or walnuts

1/2 tsp ground cinnamon

1/4 tsp ground nutmeg

1/2 tsp vanilla or almond extract

How

  1. Pre-heat oven to 375 degrees F

  2. Heat butter in a saute pan; cook apples and pear (or persimmon) until tender - about 5 minutes. Set aside.

  3. In a food processor, combine dates, alternative flour, nuts, cinnamon, nutmeg, and extract of choice.

  4. Blend until mixture becomes slightly clumpy.

  5. Set aside, and in a separate 8 in. x 8 in. baking dish, combine blueberries, cherries, diced apple, pear (or persimmon), and tapioca or arrowroot powder and lightly mix.

  6. Top fruit base with crumble mixture.

  7. Cover with foil and stick in oven for 12 minutes.

  8. Remove foil, and continue cooking for another 10-12 minutes, until fruit is bubbling, and topping is slightly browned and crispy.

  9. Remove from oven, let cool, and enjoy!
